Paneer is made from milk and all other dairy products however it is heated to over 200 degrees Fahrenheit when prepared. 

Then it is added to some acid to coagulate the milk. The most common types of acids used are lemon juice and vinegar.

In the case of paneer, there is no emulsification step. Hence, it is a highly perishable product. Its shelf life is very short spanning three days beyond which it perishes.
